Pumpkin Pudding Indulgence

Autumn brings falling leaves, crisp air and the pumpkin craze. You can harvest, carve and pick pumpkins, but best of all you can eat them. The veggie is low in calories and high in nutrients, which is a dynamic combination. According to, pumpkin is high in vitamin A and vitamin A is essential to the integrity of skin membranes. Pumpkin can be consumed in many forms and dessert happens to be one of them. Pumpkin Pudding Indulgence is a healthier version of pumpkin pie that you can feel good about eating. The recipe is inspired by the traditional fall dessert, but it skips the crust and uses less sugar. It contains antioxidants and high amounts of vitamin A. It’s hard to beat a nutritious and organic dessert. Here is the recipe, Belles:


  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 2 large eggs
  • Single 15 oz. can of pumpkin puree, preferably organic
  • Single 12 oz. can carnation evaporated milk (low-fat version)


Preheat oven to 425 degrees. Mix sugar, salt and spices in a small bowl. Beat eggs separately in large bowl. Stir pumpkin puree and sugar spice mixture into the egg bowl. Gradually stir in evaporated milk. Pour in 9×13 glass pan that has been lightly coated with cooking spray. Bake in preheated oven for 15 minutes. Reduce temperature to 350 degrees and bake for another 40-50 minutes or until knife inserted in center comes out clean. Let the pumpkin delight cool. Serve immediately or refrigerate. You can even top it off with a dollop of fresh whipped cream.
